Raspberry Matcha Muffins

Ingredients
Dry Ingredients
170g organic gluten-free plain flour (or wholemeal flour)
16g matcha green tea powder
40g chicory root fibre (inulin)
60g golden caster sugar
8g baking powder
2 tbsp ground flaxseed
Pinch of sea salt
Wet Ingredients
120g milk of your choice
60g avocado oil (or light olive oil)
1 tsp vanilla extract
Fruit
120g fresh raspberries, plus extra for topping
Method
Preheat your oven to 180°C fan and line a 12-hole muffin tin with cases.
In a large bowl, whisk together the flour, matcha, chicory root fibre, sugar, baking powder, flaxseed and salt.
In a separate jug, whisk together the milk, avocado oil and vanilla.
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing.
Carefully fold through the raspberries.
Divide the mixture between the muffin cases and top each with a couple of extra raspberries.
Bake for 18–20 minutes, until risen and a skewer inserted into the centre comes out clean.
Leave to cool in the tin for five minutes before transferring to a wire rack.
